Curiosity: Doré grapes are harvested late, before the first snowfall of the year. Its intense golden color (doré in French) gives it its name.
THE WINE:
Golden yellow. On the nose hints of zabaglione, custard, honey, aromatic berries, caramel and dried apricots. On the palate, soft, fresh and savoury with a long fruity finish. Soil (type, exposure, altitude): moraine, loose, sandy on a slope with north-west and south exposures. Altitude from 600 to 950 metres above sea level. First year of production: 2000. Annual bottles produced: 4,000 bottles (0.375 litres). Surface area, training system, planting density, yield: approximately 0.5 ha, Guyot and Gobelet system; 8,000/10,000 feet per hectare, ridge and retouching and free-form rows. Yield 2,500 kg/ha.
VINIFICATION AND REFINING:
Grapes dried on the vine for 40 days, soft pressing and fermentation for 25 days at a temperature of 13 °C. Aged “sur lies“ for 6 months. Aged in bottle for 6 months.
FOOD PAIRING:
strudel, dried fruit, extra dark chocolate, tegole valdostane foie gras, Bleu d'Aoste, smoked trout. Also indicated as a meditation wine, to accompany moments of leisure and pleasure.
