Talò Nero di Troia Puglia IGP is a red from Uva di Troia, also called Nero di Troia, a varietal from Puglia known for producing elegant wines with a fine taste and aroma profile. A lovely softness balances the firm tannins, making the wine balanced on the palate and suitable for pairing with dishes of a certain structure.
PRODUCTION AREA:
Alta Murgia, Puglia, approximately 180 m above sea level. Soil: Deep, medium-textured, mainly clayey and rich in skeleton.
VINIFICATION AND REFINING:
Thermo-controlled maceration and alcoholic fermentation with selected yeasts for about 10 days. Aging in French and American oak barriques for 6 months
THE WINE:
Bright and intense ruby red color; the bouquet is an elegant mix of floral notes of violet, fruity hints of cherry and blackberry, spicy notes of coriander, black pepper and licorice. A light toasting enriches the olfactory profile with notes of tobacco and cocoa. Firm but elegant tannin, not very marked; structured wine in which a nice freshness is noted given by a good acidic note that ensures a certain longevity
CULINARY PAIRING:
Succulent and very seasoned first courses such as lasagna, pasta with meat sauce, homemade pasta with rich sauces. Also ideal with second courses of red meat, stews, braised meat and grilled meat. Also excellent with semi-mature cheeses Serve at: 16-18°C
