The red wines of Les Cretes are born between 350-800 m above sea level. The vineyards are divided into micro-plots (with an average extension of less than 1500 m2), on a steep slope and are characterized by medium planting density (6-9,000 feet/ha). In addition to the areas of Les Crêtes and La Tour di Aymavilles, with a North/West exposure, the grapes are also found in the Les Toules vineyards of Sarre, a historic vocational area of Torrette, and in the vineyards of Saint Christophe with a South exposure. Nebbiolo, on the other hand, has always been present in the Aosta Valley, and is grown in the alluvial valley floor of glacial origin (in the vocational areas of Arnad and Issogne).
In the Bufferia and Sazzé areas of Aymavilles, the grapes destined to become our most traditional red wines originate. The vineyards are 20 to 70 years old, they are the old family vineyards . The soil is sandy and steep, with a West exposure.
The Pinot Noir Revei, which in patois means clock, is instead linked to the history of the medieval tower that dominates the Aymavilles vineyard where the grapes with which we produce this long-awaited wine are grown.

VINIFICATION:

destemming of refrigerated grapes, fermentation for 12 days in stainless steel at a temperature of 24 °C, with daily pumping over. Maturation for 12 months in 300 l French oak barrels. Refinement in bottle for 6 months.

THE WINE:

ruby, with garnet nuances. On the nose, slightly spicy and toasted with notes of berries. On the palate, fine and complex, savory and fresh.

SERVING TEMPERATURE:

16/18 °C

CULINARY PAIRING:

duck breast with orange, Parisian-style escargot, tagliatelle with wild boar ragù.

CURIOSITY':

Les Cretes began producing its Syrah in 1995 as a table wine because in the Aosta Valley it was not recognized as a DOP. In 2007 the legislation changed and since then Les Cretes has continued to produce its Syrah DOP, renowned for its minerality and freshness, linked to its mountain character.
