A vine with a surly temperament, Susumaniello. That's why Susco, "reserved" in the local dialect. Generous in youth, as it ages it becomes frugal, if not stingy, in yields. For its low productivity set aside in the past and today revalued, by us in purity. It gives wines with a lively color, complex bouquet and elegant tannins.
TERRAIN:
Of coastal origin, rich in skeleton, of medium texture tending towards sandy, medium deep, porous and draining; dark in colour
VINIFICATION AND REFINING:
Thermo-controlled maceration and alcoholic fermentation with selected yeasts for about 10 days. Aged in French and American oak barriques for 6 months.
THE WINE:
Wine with a floral and fruity nose, spicy with delicate balsamic notes; the color is intense ruby red. A good tannic texture predisposes to aging in wood. In the mouth it is structured with a certain elegance, reveals an interesting acid note and a good gustatory persistence.
CULINARY PAIRING:
The structure and acid note pair well with succulent first and second courses, grilled meat, mature cheeses. Serve at: 16-18° C
