Tenuta di Vajasindi, on the slopes of Etna, is home to native vines but is also the home of Pinot Noir, which on this volcanic soil today finds a new expression. In fact, Duca Nero is born, the Pinot Noir sparkling with the charmat method, which combines elegance and freshness on the nose with a palate in which a unique minerality stands out.
Harvest
The manual harvest took place at the end of August in small 3kg boxes. The grapes were harvested at “early” ripening with high acidity and medium sugar content.
After destemming, the grapes are loaded into the fermenter and the alcoholic fermentation begins, and only after a few days does the movement of the skins begin to extract polyphenols and anthocyanins. Fermentation lasts about two weeks and at the end of fermentation the wine remains in contact with the skins for at least 5 days. The fermenter is then racked and naturally aged in cement tanks and partly in new and second passage oak barrels for at least a year. The wine is then refined in the bottle for at least two months before being released for sale.
Very pale straw yellow with clear greenish reflections. With floral scents that tell of balsamic and mineral notes, accompanied by a light bread crust. On the palate it is broad and of great freshness and fragrance.

Ideal as an aperitif, fun with more succulent dishes where the acidic strength of the fine and persistent bubbles manages to prepare the palate for another bite.
