THE WINE:
The farmers of Gallura say that a VERMENTINO, to be memorable, must see the sea: and it must see it from afar. Not up close. Listening is the secret of great wines.
It has a bright straw yellow color, with notes of fresh fruit, citrus, sea sensations and light hints of toasted almonds on the nose. Fresh , savoury, Mediterranean on the palate and with a good alcohol content.
TERRAIN:
From sandy loam of granite origin to clayey/sandy with a strong presence of quartz stones made up of minerals such as quartz, on a basic matrix that ranges from fine grain to glassy structure.
VINIFICATION:
Manual harvest in crates. Destemming and soft pressing at low temperature.
Clarification: cold static. Fermentation: 80% in stainless steel vats at 16/18 °C while the remaining 20% in lightly toasted tonneaux. Fermentation duration: 15 days. Malolactic fermentation: not carried out. Elevage: 8 months on the lees. Clarification: natural. Bottle aging: 2 months.
Production: 30,000 bt.

Excellent with steamed fish and shellfish, fish pasta, fried fish, fish appetizers and grilled fish.
