CLIMATE TREND 2022

The seasonal climate trend has had an extremely variable course
drought, characterizing a slowdown in budding, a fundamental result in avoiding the frost of the 1st week of March. The richness of the skeleton of the Valtènesi territory allowed an excellent resistance to evaporation that allowed the first moment of stress to manifest itself in the 2nd week of July, coinciding with the 1st day of rain, guaranteeing a perfect state of health and phenolic maturation.
Flowering occurred in the first days of June without loss of the flower, more complicated due to the lack of water reserves, accomplished thanks to the frosts. The fruit set was uneven, a symptom of a dry year. The correct veraison allowed the harvest on September 4th, collecting through a demanding selection of grapes with good ripeness and perfectly balanced. As for some years now, manual harvesting has given value to the experience of manual work, which knows how to collect the best of the well-ripened bunches. Excellent quality with production once again reduced by 20%


HARVEST

Strictly and always by hand.
At first light in the morning when the air and fruit temperatures are cooler to preserve the crispness of the skin.


THE VINIFICATION

The technology is represented by the “teardrop” vinification, that is the use of the pure flower through static draining before fermentation, thus obtaining a must that can be considered the “heart of the grape”.


REFINEMENT

50% of the must ferments and ages in small old 228-litre white oak barrels for approximately 6 months.


THE TASTING

COLOR: Very light pink just bloomed, almost pearl, characteristic of a
unconditional respect, during the slow draining, of the free-run must.
BOUQUET: Inviting, stimulating pleasure. Lightly spicy and subtle in the freshest elegance. Fruity notes of vineyard peach, small red fruits and black pepper. Light violet, orange blossom, grapefruit and pomegranate.

FLAVOUR: Juicy, dry without residual sugar. Perfectly corresponding to expectations. Good energy and verticality with silky and harmonious texture. Ample, rich with excellent persistence and flavour.
Long finish with a very light aftertaste of pastry almond.
GASTRONOMIC COMBINATIONS Ideal as an aperitif, it enhances raw white fish, amberjack, snapper, seared scallop, peppered mussels and any type of Mediterranean salad.
