THE SOIL:
Almost exclusively sandy soils (about 80% of the total). Very loose and slightly calcareous soil, with strong draining power. Sands of marine origin mixed with other more recent ones from river deposits
VINIFICATION AND REFINING:
Soft pressing followed by a 15-day fermentation at 16-18C°. Aged 3 months in steel on the fine lees.
THE WINE:
Intense straw yellow with bright greenish reflections. On the nose it presents notes of yellow pulp fruit with a predominance of peach notes, tropical fruits, acacia flowers. On the palate it has a soft, persistent attack, with a pleasant savoury finish.
PAIRINGS:
Light and delicate dishes. Starters both seafood and vegetable-based. Risottos or pasta dishes always based on vegetables, dishes based on shellfish and fish in general
