PRODUCTION AREA:
Valle del Sessantanni, about 40 hectares between San Marzano and Sava (TA). The thermal values characterize a rather warm environment, with very low annual rainfall and very high temperature ranges, a condition that has a beneficial influence on the quality of the grapes. This is the classic production area of the DOP Primitivo di Manduria Soil: Residual red earth with a fine texture with a calcareous substrate and sparse rocky outcrops. VINIFICATION AND REFINING:
Manual harvest of slightly overripe grapes; destemming-crushing, pre-fermentation maceration at 8°C for 24-48 hours. Thermo-controlled maceration and alcoholic fermentation with selected yeasts for about 10 days at 24-26°C. Final racking with soft presses. Malolactic fermentation in steel and subsequent permanence in French and American oak barriques for 12 months.
THE WINE:
Ruby red color very deep and elegant; broad and complex aroma, fruity with notes of plums, cherry jam to which is added a light spiciness and notes of tobacco. Full-bodied wine, soft and rich in noble tannins, with a finish that offers notes of cocoa, coffee and vanilla.
