The red wines of Les Cretes are born between 350-800 m above sea level. The vineyards are divided into micro-plots (with an average extension of less than 1500 m2), on a steep slope and are characterized by medium planting density (6-9,000 feet/ha). In addition to the areas of Les Crêtes and La Tour di Aymavilles, with a North/West exposure, the grapes are also found in the Les Toules vineyards of Sarre, a historic vocational area of ​​Torrette, and in the vineyards of Saint Christophe with a South exposure. Nebbiolo, on the other hand, has always been present in the Aosta Valley, and is grown in the alluvial valley floor of glacial origin (in the vocational areas of Arnad and Issogne).
In the Bufferia and Sazzé areas of Aymavilles, the grapes destined to become our most traditional red wines originate. The vineyards are 20 to 70 years old, they are the old family vineyards . The soil is sandy and steep, with a West exposure.
The Pinot Noir Revei, which in patois means clock, is instead linked to the history of the medieval tower that dominates the Aymavilles vineyard where the grapes with which we produce this long-awaited wine are grown.

VINIFICATION:

Selection and refrigeration of the grapes, destemming and cryomaceration for 2 days. 12 days of fermentation in stainless steel at 23 C°. Racking and aging for 18 months in used 700 l tonneaux. Bottling without filtration and stabilization. 18 months of aging in bottle.

THE WINE:

Brilliant, ruby. Fruity on the nose (undergrowth, ripe red fruit) with notes of cocoa. Savoury on the palate, pleasantly acidic with fine structure and velvety tannins. Soft and balanced on the palate. Long finish.

CULINARY PAIRING:

Braised veal cheek, aged Gressoney toma, liver croutons, saffron risotto with ossobuco marrow.

SERVING TEMPERATURE:

14/16 °C.

CURIOSITY':

Pinot Noir Revei, which in patois means clock, is linked to the history of the medieval tower, which dominates the Aymavilles vineyard and from which it is born. The tower was once the home of a hermit clockmaker, who with his trade, brought us back to the theme of time and its value, in nature and for man. From here Revei is born, son of great experience and long wait. In its creation, time plays a fundamental role from maturation to refinement. Here time expands to obtain, from the grapes brought to optimal maturation, the best expressive potential of the mountain Pinot Noir, masterfully refined, in French woods and which, once in the bottle, rests for a long time in our cellars. First year of production 2017.
