The vineyards, from which the white wines of Les Cretes are born, are cultivated between 600-800 m above sea level. Due to the geographical conformation of the Aosta Valley, the steep slopes and for reasons of hereditary succession, they are divided into micro-plots (average extension less than 1500 m2). They are also characterized by high planting densities (8-9,000 feet/ha). The largest grouping is in the Les Crêtes area of ​​Aymavilles, where the hill offers visitors its medieval tower, today a tasting point accessible to customers.
In the Aymavilles area and also in Saint Christophe, at the gates of Aosta, we find the vineyards of Petite Arvine Valle d'Aosta and Chardonnay Valle d'Aosta. In the lower Valley, in the Montjovet area, the grapes of Fleur – Petite Arvine Valle d'Aosta are grown. Pinot Gris is instead born from the grapes grown in Aymavilles and Saint Nicolas.

VINIFICATION:

Refrigeration and soft pressing of the whole bunch of grapes, fermentation, with selected yeasts, for 15 days in stainless steel at a temperature of 13-15 °C. Refinement “sur lies” for 9 months with daily batonnages, 4 months of refinement in the bottle.

SENSORY NOTES:

Bright, straw yellow. Floral on the nose (lime, hawthorn and mountain herbs), and fruity (notes of apple and pear). Savoury, soft, fresh and balanced on the palate. Long finish with mineral closure.

SERVING TEMPERATURE:

8/10 °C.

CULINARY PAIRING:

Seafood appetizers, scallops au gratin, paella, mountain trout with herbs.

CURIOSITY':

This Pinot Gris is the fruit of our Alpine terroir with a clear varietal identity: its grapes are harvested when fully ripe and, after a night of cooling, are pressed whole, to preserve their precious and very delicate aromatic profile. The yield of the 2018 harvest is low because these are new vineyards, in their first year of production, which have replaced the old vines that gave life to our Pinot Grigio Vigne Brulant in 1994. First year of production 2018.
