We quote the definition given in the 30s by Prof. Dalmasso who described it as: “a singular type of wine, of luxury…”. We decided to focus on this variety because we believe that Pignolo expresses a strong personality with an accentuated typicality, with a decisive flavour, very dry and rich in tannins even if in the less happy years it can be more rude and rough (thus resembling in some aspects the character of the Friulians). “The label” continues the thought of Capo Martino, that is to produce important wines with historical local varieties and with production and winemaking methods anchored to tradition.

REFINEMENT:

The process involves fermentation in wooden vats for 2-3 weeks, with manual punching down and subsequent refinement in small new oak barrels for a period of 24/30 months and is marketed a few years after the harvest. Pignolo, like Ribolla and others, is an ancient native vine of the Friuli Venezia Giulia Region.

THE WINE:

Depending on the vintage, dried plum, black cherry jam, cocoa and coffee emerge in the aromas. In the mouth it is powerful, broad, robust, alcoholic, with ample sweet tannins.
