The vineyards, which produce white wines, are cultivated between 600-800 m above sea level. Due to the geographical conformation of the Aosta Valley, the steep slopes and for reasons of hereditary succession, they are divided into micro-plots (average extension less than 1500 m2). They are also characterized by high planting densities (8-9,000 feet/ha). The largest grouping is in the Les Crêtes area of ​​Aymavilles, where the hill offers visitors its medieval tower, today a tasting point accessible to our customers.

In the Aymavilles area and also in Saint Christophe, at the gates of Aosta, we find the vineyards of Petite Arvine Valle d'Aosta and Chardonnay Valle d'Aosta. In the lower Valley, in the Montjovet area, the grapes of Fleur – Petite Arvine Valle d'Aosta are grown. Pinot Gris is instead born from the grapes grown in Aymavilles and Saint Nicolas.

VINIFICATION AND REFINING:

Refrigeration and soft pressing of the whole bunch of grapes, fermentation for 12 days in steel at a controlled temperature of 14°C. Refinement “sur lies” for 2 months.

THE WINE:

Bright, straw yellow. Floral on the nose (jasmine, peony), with notes of apple, plum and citrus. Savoury on the palate, balanced, with mineral nuances.

SERVING TEMPERATURE

8/10 °C.

CULINARY PAIRING :

Marinated tuna ccarpai, linguine with pesto, salted sea bream, salmon trout with herbs, also suitable as an aperitif.

CURIOSITY:

Petite Arvine is a traditional late-ripening grape variety. Its name comes from the variety – Arvine – and the small size (petite in French) of its grapes. This wine is characterized by an intense minerality and salinity typical of mountain wines.
