The red wines of Les Cretes are born between 350-800 m above sea level. The vineyards are divided into micro-plots (with an average extension of less than 1500 m2), on a steep slope and are characterized by medium planting density (6-9,000 feet/ha). In addition to the areas of Les Crêtes and La Tour di Aymavilles, with a North/West exposure, the grapes are also found in the Les Toules vineyards of Sarre, a historic vocational area of ​​Torrette, and in the vineyards of Saint Christophe with a South exposure. Nebbiolo, on the other hand, has always been present in the Aosta Valley, and is grown in the alluvial valley floor of glacial origin (in the vocational areas of Arnad and Issogne).
In the Bufferia and Sazzé areas of Aymavilles, the grapes destined to become our most traditional red wines originate. The vineyards are 20 to 70 years old, they are the old family vineyards . The soil is sandy and steep, with a West exposure.
The Pinot Noir Revei, which in patois means clock, is instead linked to the history of the medieval tower that dominates the Aymavilles vineyard where the grapes with which we produce this long-awaited wine are grown.

VINIFICATION:

Grape selection and destemming, whole berry fermentation for 10 days at a temperature of 23 °C, with daily punching down. Maturation for 12 months in a 25Hl French oak vat. Refinement in bottle for 1 year.

THE WINE:

Ruby-cherry. Fruity on the nose (blackberry, cherry), with notes of violet and balsamic nuances. Elegant, savoury, fresh, soft and slightly spicy on the palate. Persistent finish.

CULINARY PAIRING:

Mixed boiled meats, veal kidney, ravioli with roast sauce.

SERVING TEMPERATURE:

16/18 °C.

CURIOSITY':

Nebbiolo, typical of Piedmont, has always been present in the Aosta Valley, where it is traditionally grown under the name of Picotendro, in the alluvial valley floor of glacial origin (in the suitable areas of Arnad and Issogne). Les Crêtes dedicates itself to the vinification of this historic variety, to enhance its mountain identity. This is how the Nebbiolo “Sommet” came to life, which in French means Summit, in honor of the mountains that surround its vineyards. First year of production 2015.
