VINIFICATION:
The grapes are harvested in the very early hours of the morning so that the fruit reaches the cellar intact and not stressed by the higher temperatures of the day. The musts, coming from the maceration of the grapes on the skins at 10 °C for about four hours, are transferred by gravity into decantation tanks where they become clear before being transferred into barriques where the alcoholic fermentation takes place followed by the malolactic fermentation. In February the Chardonnay is ready to be transferred back into steel to join with the Grechetto, which is instead vinified separately in the “absence” of wood. The Cervaro della Sala then ages for a few months in the bottle in the historic cellars of the Castello della Sala before being released onto the market.
