Aldobrandesca Farm
Fattoria Aldobrandesca is located in the southern Maremma, in the center of what is known as "the Etruscan area of the Tufi". The most widespread image of the Maremma is the "maritime" one, made of plains and pine forests, horses and cowboys. The Maremma we are talking about, however, is the inland one, which has the indisputable charm of the tuff, a rock on which in ancient times real fortresses were built - now real open-air museums - such as Pitigliano, Sorano and Sovana. Right at the foot of the tuff spur where Sovana stands, are the vineyards of the Fattoria Aldobrandesca, immersed in a beautiful natural and archaeological panorama.
VINIFICATION:
The freshly picked grapes, destemmed and softly pressed, were transferred to stainless steel tanks. The first phase of maceration, the cold pre-fermentation phase, took place by lowering the temperature to between 5 and 10 °C for 3 - 4 days, in order to ensure the extraction of the aromas and anthocyanins present in the skins. Subsequently, the temperature of the must was gradually raised to allow the alcoholic fermentation to take place, which took place at a controlled temperature of 30 °C; the maceration, managed delicately to allow a controlled extraction of sweet tannins, took place in about a week. The wine was transferred to French oak barriques, where malolactic fermentation took place and the subsequent refinement, which lasted about 10 months. Vie Cave 2020 rested for the following months in the bottle before being released on the market.
TASTING NOTES:
Vie Cave 2020 has an almost impenetrable ruby red color. The nose is intense and complex: notes of ripe fruit, blackberry, blueberry, plum and sour cherry combine with toasted hints of coffee, bitter cocoa and tobacco with a pleasant and fresh sensation of Mediterranean scrub. On the palate it is rich, with velvety tannins that support a long finish and a persistent aftertaste, with nuances of bitter chocolate and mint.
THE CLIMATE:
The winter of 2020, characterized by temperatures below average and a lack of rain, preceded a mild spring with sporadic rainfall; these climatic conditions ensured the regular budding and flowering of the Malbec variety. The summer, characterized by a generally hot and dry climate, put the vine to the test, which resisted water stress well thanks to the volcanic soil; this particular soil, characterized by excellent microporosity, guaranteed the correct water reserves, thus favoring the regular growth and development of the plants. The rains at the end of August lowered temperatures, allowing for slow and optimal ripening. The harvest took place in the first week of October.
