Native to the slopes of Etna, Nerello Mascalese takes on different characteristics depending on the area in which it is grown. On the terraces of the Tenuta di Vajasindi these black grapes give life to Lavico Etna Rosso, a wine with an elegant structure, which is partly aged in French oak barriques, fresh and delicately savoury.

On the northern side of Etna, in the hamlet of Passopisciaro in the municipality of Castiglione di Sicilia, stands the Tenuta di Vajasindi, with its 21 hectares of land. The vineyards extend over three terraces delimited by a dry stone wall, the first at 700 meters above sea level, the second and third at 620 meters above sea level. Lavico Etna Rosso Doc and Lavico Etna Bianco Doc have their roots in the Volcano, children of a harsh but generous nature. The vineyards are cultivated on the northern side of the Volcano, in a special microclimate in which the land, formed by the crumbling of different types of lava and more recent eruptive materials such as lapilli, ash and sand, naturally offers intense, savory and fresh nuances to the wines.

THE 2022 VINTAGE:

The 2022 harvest was characterized by a rainy winter and a dry spring. In general, the various phenological phases of life were slightly earlier than the average of recent years. A very hot start to the summer with a more tempered finish.

VINIFICATION AND REFINING:

After destemming, the grapes are loaded into the fermenter and the alcoholic fermentation begins, and only after a few days does the movement of the skins begin to extract polyphenols and anthocyanins. Fermentation lasts about two weeks and at the end of fermentation the wine remains in contact with the skins for at least 5 days. The fermenter is then racked and naturally aged in cement tanks and partly in new and second passage oak barrels for at least a year. The wine is then refined in the bottle for at least two months before being released for sale.

THE WINE:

Red elegantly pale and bright. The nose recognizes notes of small red fruits with balsamic and mineral sensations, which in turn blend with vanilla and spicy notes. The taste is structured and elegant, with good freshness and delicate flavor, the tannin is ripe and balanced. Long palate persistence.

FOOD PAIRING:

ideal with grilled red meats, braised meats and game. Excellent with medium and long-aged cheeses, it accompanies dishes with fragrant flavours based on red meats. Served cooler, it also pairs with savoury fish dishes.
