In Lavico Etna Bianco, Carricante, an indigenous grape variety from the Etna area, tells its story through intense aromas of peach and exotic fruit, lit up by iodine sensations, sometimes spicy. Savoury and persistent on the palate, it has the typical freshness of the grape variety, which gives it structure and an unexpected longevity, and the minerality of those who sink their roots in a soil made of lava.

On the northern side of Etna, in the hamlet of Passopisciaro in the municipality of Castiglione di Sicilia, stands the Tenuta di Vajasindi, with its 21 hectares of land. The vineyards extend over three terraces delimited by a dry stone wall, the first at 700 meters above sea level, the second and third at 620 meters above sea level. Lavico Etna Rosso Doc and Lavico Etna Bianco Doc have their roots in the Volcano, children of a harsh but generous nature. The vineyards are cultivated on the northern side of the Volcano, in a special microclimate in which the land, formed by the crumbling of different types of lava and more recent eruptive materials such as lapilli, ash and sand, naturally offers intense, savory and fresh nuances to the wines.

VINIFICATION AND REFINING:

Upon arrival of the grapes in the cellar, the grapes are unloaded by hand for destemming, followed by a soft pressing of the grapes preceded by a maceration of the skins for at least 4 hours. The must obtained is separated from the solid parts by static sedimentation. From the decanted must, fermentation begins at a controlled temperature of 14-16 °C and then the wine is left on its lysed yeasts to refine for at least 3 months. The wine then refines in the bottle for at least a month before being released for sale.

THE WINE:

Pale straw yellow with evident greenish reflections. Rich aroma with good intensity, notes of tropical fruit, white peach and Mediterranean scrub emerge on the nose. Intense and harmonious flavor, great freshness and flavor with a long and elegant persistence.

FOOD PAIRING:

Ideal with seafood appetizers and sea urchins, tasty first courses of Mediterranean cuisine. Excellent with white meats, grilled vegetables and baked fish.
