Excellence in five rules
But how does Laudemio Frescobaldi oil become so good, of such high quality and, therefore, recognized throughout the world? It all starts from the territory and from the attention to the smallest details of the entire production process .
- Olives owe their properties to the altitude and microclimate in which they grow. Frescobaldi olive groves, in fact, are located in Tuscany between 200 and 500 meters above sea level.
- The olives are harvested between October and November, before they reach full ripeness. In this way they will still retain all their properties intact.
- The pressing takes place no later than 24 hours after harvesting. The fast times are possible above all because the Frescobaldi family owns its own mill, which helps to follow and take care of the entire production chain.
- Laudemio Frescobaldi oil is so long-lasting and bright green also because it is filtered and, therefore, appears clear and does not contain residues. Obviously, you have to be careful how you store it: always in its container, well closed and away from heat sources.
- After the entire production process, only the last phase is missing: tasting. The final product is evaluated by expert tasters and only the one considered of the highest quality is selected as Laudemio Frescobaldi.
THE CLIMATE:
The winter of 2022-2023 was generally characterized by mild average temperatures. The months of January and February were slightly colder, but there were very few days when temperatures dropped below zero. The months of March, April and May were characterized by strong temperature variations with a few days of temperatures close to zero. The end of May and the entire month of June were very rainy months, during the flowering and fruit setting phase of the olive tree. The summer of 2023 was a season with not very abundant rainfall. The olive tree had to implement all the physiological resilience mechanisms typical of a Mediterranean plant. The olive trees had to slow down their vegetative growth allowing the olives to develop. However, the temperatures recorded for the summer months were not particularly high. Only on the dates of August 23 and 24 were temperatures just above 40 °C. From the second half of October, the cooler days and the desired autumn rains allowed the olive ripening process to conclude in the best possible way before the start of the harvest, which began on Monday 16 October.
TASTING NOTES:
Laudemio Frescobaldi 2023 is particularly balanced and harmonious. The aromas recall the fruit from which it comes, a fresh olive just picked and pressed, to which are added scents that recall freshly cut grass and tomato leaves. On the palate, the bitter and spicy blend together in a very balanced and pleasant way. The typical flavors of Tuscany emerge, such as artichoke and cardoon. In the mouth it is clean and round with a very enveloping note of green almond.
