The Vineyard Garden. A microcosm of culture and biodiversity.

Profumo di Vulcano was born in a small vineyard dating back to the end of the nineteenth century, about half a hectare of land on the northern slopes of Etna at 600 meters above sea level, in Contrada Feudo di Mezzo, a hamlet of Passopisciaro, in the municipality of Castiglione di Sicilia.

The altitude and north-facing position offer shelter from strong sirocco winds, resulting in a daily summer temperature range of around 28°C: these particular conditions ensure the grapes ripen longer, which enriches their flavour and complexity.

The plants, some pre-phylloxera and with an average age of 100 years, represent the best native Etna species - Nerello Mascalese and Cappuccio, Alicante and Francisi - combined with about forty white grape plants present in the vineyard. A vineyard-garden that is the perfect expressive synthesis of its territory.

THE WINE:

Profumo di Vulcano is an authentic, unprocessed wine, capable of transmitting the aromas and flavors of its land of origin in just a few sips. Profumo di Vulcano is like this: a wine from another era, with a strong character and an unmistakable identity. Every year, between the end of September and the beginning of October, we bring forward the harvest to keep the freshness of the fruit alive and give the wine a sensitive nervous backbone. Fermentation occurs spontaneously, in wooden vats, and without temperature control. After maturing for at least twenty-four months in first and second passage tonneaux, the wine is bottled with minimal filtration and without decanting, according to the traditional method, where it is refined for another 12 months. The result is something unique, with typically Mediterranean olfactory notes and a rich, tannic taste and great personality. A complex wine with a thousand nuances like its territory, witness to over a century of history and life at the foot of Etna.

VINIFICATION AND REFINING:

Spontaneous fermentation in open vats, without temperature control and with indigenous yeasts, aged in first and second passage tonneaux for 24 months, 6 months in the bottle.

CHARACTERISTICS:

Intense ruby ​​red color, deep and transparent, the nose offers ample, raspberries and wild blueberries, followed by citrus and Mediterranean scrub memories, orange and mandarin, marjoram and myrtle; closing notes of sweet spices, sandalwood and pipe tobacco. On the palate it is rich and deep but not round, with a slightly lively tannic backbone, the finish in the mouth is complex, a sweet-salty sensation of great personality and persistence.

FOOD PAIRINGS:

Excellent with preparations based on Nebrodi black pig, feathered game such as partridge and pheasant.
