ETNA RED The stone of the volcano



Cultivating a tradition.

After the experience of Profumo di Vulcano I felt the need to produce a more accessible wine, to share the fruit of my work with a greater number of people, connoisseurs and simple enthusiasts.

For this reason I have acquired new vineyards located on the northern slope, within the production area of ​​the denomination of origin, in a district of excellence that boasts a winemaking tradition of over two thousand years.
It is from these sandy and skeletal soils that my Etna Rosso is born, a wine that speaks the language of its land and embodies its spirit. A pure taste of authenticity.




THE WINE:

Situated at an altitude between 650 and 800 meters above sea level, the vineyards dedicated to the production of Etna Rosso are located in the areas of Passopisciaro, Solicchiata and Montelaguardia. This last plot follows the model of the garden-vineyard, already successfully tested for Profumo di Vulcano: 3 hectares delimited by a long boundary wall, within which vines, centuries-old olive trees and numerous fruit trees coexist. From these vineyards we obtain Nerello Mascalese and Nerello Cappuccio grapes, from plants with an average age of 15/20 years, cultivated in a traditional way with full respect for the land and local biodiversity.

Ruby red color, transparent and brilliant. Fragrant on the nose, it opens with notes of red fruit, strawberries and raspberries wrapped in a citrus freshness of mandarin and a pleasantly mineral nuance. It closes with a sensation of white chocolate and spices, pepper and cardamom. In the mouth it is particularly fresh and thirst-quenching, with a light and harmonious tannic perception. The aftertaste is pleasantly clean and savory, captivating and carefree.


VINIFICATION AND REFINING:

Spontaneous fermentation with indigenous yeasts, maturation in steel for 12 months, refinement for 6 months in the bottle.

FOOD PAIRING:

Due to its dynamism, it lends itself to very wide combinations; excellent served fresh with Mediterranean turbot and grilled tuna; also ideal with white meats such as rabbit and guinea fowl.
