Following the manual harvest of Riesling grapes from our Madonna di Como vineyards, we move on to a cold maceration of about 3 days. Static decantation always in steel and subsequent spontaneous fermentation in steel tanks for about 20 days at 17-18°C of temperature. This is followed by 6 months of permanence on the fine lees and another 6 months of refinement in steel. Finally 2 months in the bottle.
Organoleptic characteristics
Straw yellow color with greenish reflections. Semi-aromatic nose with hints of yellow fruits and flowers, it has a characteristic mineral note that will be accentuated during the refinement in the bottle. In the mouth crunchy , vertical, pleasant, fresh.
Perfect match
Riesling, due to its characteristics, pairs well with fish dishes such as marinated tuna, lobster, pike, monkfish, but also oysters and shellfish. Perfect with goat cheese and blue cheese. Ranging across world traditions, we find foie gras in a crust and Alsatian chocroute in France. In Norway, smoked salmon, Røkt laks. Going to Japan, sushi. Moving to the United States of America and Louisiana, crawfish (freshwater shrimp), here among the recipes we think of Cajun cuisine and stew Gumbo (soup with shrimp), Jambalaya (dish based on rice, shrimp, chorizo, meat).
