With a small production of only 2,788 bottles Elena Walch presents “Aton”, the maximum expression of Pinot
Noir from the renowned Alto Adige winery. The name chosen to christen the latest creation from the Walch family must be
to the Egyptian god of the sun, represented by a bright solar disk that rises above all other deities: Aton is the origin
of light and life.
THE WINE:
The “Aton” Pinot Noir Riserva 2019 Alto Adige DOC vintage is born from a precise selection of grapes coming from medium-high altitude lands, located between 400 and 600 metres above sea level on both sides of the valley, from
complex soils, mainly clayey and calcareous with marly residues.
The higher the vineyard, the more light and hours of sunshine and freshness the vines receive. A long exposure to sunlight, together with a cool climate and a large temperature range between night and day, represent the characteristics
ideal environmental conditions for Pinot Noir. On the steep slopes stand vines from 15 to 61 years old from low-yielding French clones, whose grapes are exclusively harvested and selected rigorously and delicately by hand.
The choice of the best quality plots in the vineyards and an optimal combination of exposure and altitude, allow a higher phenolic maturation of the grapes without excessive sugar content and, consequently,
a higher natural acidity that made “Aton” Pinot Noir Riserva 2019 extraordinary for its structure, elegance, freshness. With “Aton” you embark on a unique sensorial journey that involves the senses in the discovery of its surprise.

VINIFICATION AND MATURATION:
From the Pinot Noir vineyards located at a higher altitude, the grapes were able to benefit from the cooler climate of the place and retain a fresh acidity, contributing to the excellent balance of the 2019 vintage. Overall, the grapes have
showed great structure, excellent maturity and intense colour.
After a cold maceration lasting 5 days and fermentation at a controlled temperature of 23°, for a further 15 days, in small steel barrels, a period of 12 months in medium-sized French oak barriques followed.

The slow and delicate processing of the grapes was carried out in compliance with the original quality of the grapes and, following the same principle. During the following 15 months of maturation in the bottle, “Aton” Pinot Noir Riserva 2019 continued to silently evolve the broad spectrum of its potential. The precious Grande Cuvée can achieve an important longevity
during which the product will continue to mature and evolve.
