Edda (“she” in the Salento dialect) is the feminine and sensual soul of San Marzano. A complex white, full of Mediterranean suggestions. Solid acidity intertwined with an enveloping and elegant warmth, savory and mineral on the palate. A work on finesse and longevity for a wine obtained from Chardonnay bunches together with various native Apulian grapes that compete year after year to complete the blend.
PRODUCTION AREA:
San Marzano (TA), Salento, Puglia. About 100 m above sea level. The climate is characterized by a good temperature range between day and night. Soil: Shallow and medium-fine textured.
VINIFICATION AND REFINING:
The grapes are destemmed and left in cryomaceration for a few hours. The next phase is the soft pressing of the marc followed by a cold static decantation. The alcoholic fermentation takes place in French oak barriques. Aging on the lees in French oak barriques for 4 months with weekly bâtonnage
