In 1984, Duca di Salaparuta produced pure Nero d'Avola for the first time: Duca Enrico was born, inaugurating a new era in Sicilian winemaking.

VINIFICATION AND REFINING:

After unloading the crates, there is still a sorting on a conveyor belt. After the
destemming of the bunches we arrive inside the winemaker where the fermentation takes place
alcoholic fermentation begins at a controlled temperature of approximately 26–28 °C at the same time as the
maceration of pulp and skins. Fermentation continues with macerations and delestage
increasingly punctual. At the end of fermentation, the wine remains in contact with the skins for another week and after racking, the malolactic fermentation is awaited in a cement tank before beginning the refinement in fine-grained, elegantly toasted, new and second passage oak barriques for a period of 14 to 18 months. The wine then ages in the bottle for at least a year before being released for sale.

THE WINE:

Intense red with purple reflections, Duca Enrico stands out for its complexity and elegance. On the nose, small red fruits accompany citrus notes of blood orange and spices, the result of the refinement in barrique. On the palate it is vertical, with sweet and enveloping tannins, with a persistent finish.

FOOD PAIRING:

Ideal with grilled red meats, braised meats and game.
Excellent pairing with medium and long-aged cheeses.
