Dom Ruinart Rosé 2007 is a rare champagne, which owes its unique character to the selection of Grand Crus: 80% Chardonnay from the Côte des Blancs (Avize, Le Mesnil-sur-Oger, Oger, Chouilly) and the Montagne de Reims (Sillery, Verzenay), blended with 20% Pinot Noir vinified in red, entirely from the Grand Cru vineyard of Aÿ. The original nature of this blend dominated largely by Chardonnay gives the wine an extraordinary freshness. |
TASTING NOTES
Dom Ruinart Rosé 2007 is a refined, dynamic wine with a strong character. Toasted notes on the nose mingle with ripe citrus aromas. On the palate, the Chardonnay offers freshness and a bright character full of integrity. On the finish, it is pleasantly structured with a contained strength, allowing the Pinot Noir to express itself with a delicate bitterness highlighted by the low dosage. The nose immediately releases a warm and sunny aroma, accompanied by toasted notes of coffee and cocoa beans, mixed with candied apple and ripe citrus fruits such as mandarin, blood orange and kumquat. On the palate, this 2007 vintage guarantees a precise and honest impact: aromas of wild plum and hibiscus are enhanced by strong notes of ripe citrus, including blood orange. Hints of sap are not lacking, with a wonderful freshness on the finish.
CULINARY PAIRING:
Dom Ruinart Rosé 2007 is a unique champagne, perfect to serve with fish dishes such as salmon tataki or marinated tuna, but also with meats such as Bresse poultry or veal. A few more years of aging will intensify the wine: it will still be perfect to pair with the same ingredients, but the notes released will be more intense, smoky and spicy.
Dom Ruinart Rosé 2007 should be stored in a cool place away from light. Serve this vintage at a temperature between 11 and 13 °C, in large tasting glasses that will enhance the sublime character of its aromatic complexity.
