Symbol of the company, Papà Celso is dedicated to the memory of Celso Abbona, father of Marziano, who planted one by one the vines of the Doriolo vineyard, from which his grapes come. It is our most important Dogliani, obtained from vines over 60 years old that give the wine a happy balance between elegance, power and harmony.

Excellent wine

THE WINE:

Rich and structured, with aromas of red and black fruit, it is a harmonious and balanced wine on the palate, where a light acidity and a discrete tannic component are wrapped in a fruity pulp. It can evolve in the bottle for several years. Suitable to accompany first courses with ragù, white meats and medium-aged cheeses. Serve at a temperature between 16-18° C.

VINIFICATION AND REFINING:

Destemming-crushing followed by spontaneous alcoholic fermentation using indigenous yeasts, in contact with the skins in steel tanks at a controlled temperature. Dry racking and decanting with decanting into steel tanks. Cold stabilization that avoids the use of clarifying products. Completely carried out in steel immediately after alcoholic fermentation. In steel tanks for several months until bottling. Then rest in the bottle at a constant temperature of 14° C before being released for sale.

THE 2023 VINTAGE:

The 2023 vintage has given us great balance between structure and freshness and this balance is the main characteristic of the best vintages of this wine. The tasting shows us a very intense purple color to the eye while to the nose
we find strong notes of berries, plum and black cherry as well as a pleasant fresh and vinous note. Tasting it we can appreciate a very full and intense body, a light tannin cleans the palate and gives structure, the acidity balances the alcohol content. The "Papà Celso" is the ideal wine to pair with the great classics of Piedmontese cuisine
and it is a Dolcetto that also knows how to face the challenge of time admirably, being capable of evolving even after many years.
