From a careful selection of Sauvignon Blanc and Sémillon grapes. Conte della Vipera pays homage to the first owners of the castle and the label features the 13th century chapel of San Giovanni, located on the property.


HISTORICAL DATA:

The wine takes its name from the first owners of Castello della Sala and the label features a drawing of the 13th century Chapel of San Giovanni located on the property. The vineyards destined for Conte della Vipera are located at an altitude ranging from 250 to 350 meters above sea level on soil rich in marine fossil sediments. The first vintage produced was 1997.

VINIFICATION AND REFINING:

The bunches, harvested by hand, were immediately transferred to the cellar and cooled before pressing in order to preserve the characteristic varietal aromas. After soft pressing, the musts, kept for a few hours at a temperature of 10 °C to allow for natural clarification, were transferred to stainless steel tanks, where alcoholic fermentation took place at a temperature no higher than 16 °C. Once this operation was completed, the wine was stored at a temperature of around 10 °C to prevent malolactic fermentation and to preserve its organoleptic characteristics unaltered. The two varieties were then combined so that one could “complete” the other. Fresh, vertical, slightly aromatic the Sauvignon Blanc, soft and tropical the Sémillon.

TASTING NOTES:

Conte della Vipera 2023 has a straw yellow color with bright green reflections. The nose expresses fruity sensations of pink grapefruit and lychee combined with fresh and delicate notes of sage and elderflower. On the palate it is refined, agile and characterized by a good freshness. The finish is dominated by sensations of limes and pineapple.

CLIMATE:

The 2023 vintage was characterized by a mild winter with little rain and a spring marked by higher than normal rainfall that contributed to slowing down the budding and subsequent growth of the plants, rebalancing the soil's water reserves. The flowering of Sauvignon Blanc and Sémillon occurred in early June while fruit set a week later with a slight delay.
of about 7 days compared to the average. From the second half of July to the whole month of August the generally warm climate, characterised by excellent temperature variations between day and night, favoured slow and regular ripening.
The harvest began with the Sauvignon Blanc in the third ten days of August and ended with the Sémillon towards the middle of September. The grapes were healthy at the time of harvest,
ripe, with excellent acidity and an excellent aromatic profile.
