Cinerino was born from the encounter between the Abbona family and the Viognier of the Rhone Valley. Since then, the desire to reproduce that excellence has taken root in our hills. The name comes from the heron that occasionally stops in the lake overlooking the vineyards.
THE WINE:
2022 celebrates the 30th birthday of the first rows of Viognier in Dogliani. Nature too, almost as if wanting to pay homage to it, has given us one of the best expressions of Cinerino ever. Very intense balsamic and mentholated notes, of exotic fruit and light notes of acacia honey distinguish the unique bouquet of this wine on the nose. On the palate we find its classic richness and opulence, a pulpy sip, satisfying, but never cloying, which combined with a nice acidity also gives drinkability and elegance. All this makes Cinerino a very pleasant wine immediately but also capable of evolving over time proving to be a great white even for aging. Perfect as an aperitif, it goes well with fish, oysters, risottos. Excellent with soft blue cheeses. Serve at 14-16° C. First year of production: 1996

VINIFICATION AND REFINING:
Destemming-crushing and skin maceration with the use of CO2. Racking and soft pressing, static decantation and racking into acacia barrels with inoculation of selected yeasts. Alcoholic fermentation follows in barrels at cellar temperature, with daily bâtonnage until the end of alcoholic fermentation. Ageing on the yeasts for several months, during which the bâtonnage is repeated weekly. Malolactic fermentation Not carried out. Ageing: In acacia barrels for several months, at the end of which the wine is assembled in a steel tank where static decantation takes place; racking and bottling follow. Then it rests in the bottle at a constant temperature of 14° C before being released for sale.
