The Rosé Extra Brut is a deliciously light wine, but at the same time it has a rich and vinous character, a well-balanced freshness and delicious aromatic nuances.
VINIFICATION AND REFINING:
The Chardonnay is partially vinified in wood and a part of the Pinot Noir from Les Riceys is vinified in red. MONTHS ON THE YEASTS 30 months
TASTING NOTES:
Bright salmon pink color, with intense and deep pale pink reflections. The nose initially stands out notes of strawberry, raspberry and passion fruit, which then give way to floral memories of peony, poppy and rose combined with a subtle hint of apricot. On the palate it is juicy and fruity, with a well-integrated acidity linked to hints of lemon and grapefruit that brings balance. PAIRINGS It pairs best with fish dishes such as a tuna and avocado tartare and pasta with pesto. Also excellent with a mascarpone and strawberry cheesecake.
