With the ownership of 22 hectares of vineyards, the Chiquet family ensures continuity in compliance with ancestral rules. The grapes used in the blends come from the three classic Champagne grape varieties; the champenois presses allow for a slow extraction of the juice: a fundamental precaution to obtain a white wine from black grapes, preserving the finesse of the aromas.
THE WINE:
The Premier Cru “Tradition” Gaston Chiquet is a Brut Champagne that, when examined visually, has a light golden yellow color, with a bubble that lasts well. The range of notes that can be perceived on the nose moves on clean and enveloping aromas, which from fruit, declined with different nuances, pass to touches of bread and yeasts. In the mouth it has a good body, characterized by a dry and refreshing sip, characterized by a pleasant final persistence. A classic French bubble , where the balance between grapes and terroir is admirable. Ideal to consume throughout the meal. Vineyards located in the municipalities of Hautvillers, Mareuil-sur-Ay and Dizy. Alcoholic and malolactic fermentation carried out in small thermoregulated tanks, cold stabilization and filtration followed by a rest of 3 or 4 months. Aged on the yeasts for 2.5/4 years, then dégorgement and dosage of 8.8 g/l. Before being labeled and marketed it rests for another 3 to 6 months. A representative cuvée of the terroir from which it comes. Persistent and fine, light gold in color with golden reflections, a nose of dried fruit, apricot, soft on the palate.

Excellent as an aperitif, it goes well with simple fish-based dishes, light fried foods, raw seafood or vegetable flans.
