It is one of the oldest and most prestigious winemaking realities in all of French Burgundy. Founded in 1860 by Zéphir Régnard, production takes place in the Pouilly Fuissé area, in the historic Clos du Pavillon where the cellars dating back to 1755 are located. Since 1984, the Maison has undergone major renovation work (in the vineyard and in the castle) thanks to the change of ownership and therefore by the will of Baron Patrick De Ladoucette.
THE WINE:
For this wine, a careful selection of the best parcels located in the municipality of Chablis is made. In this particular and happy harvest, this cuvée is part of the Collection line of Baron Patrick de Ladoucette. Intense straw yellow color that smells of apricot and rennet apple. On the palate it expresses itself with fat and savoury sensations. Of excellent length, the finish is intense and persistent and recalls citrus and buttery aromas.
The vines are grown on the typical calcareous soils of the Chablis region. These are soils of ancient marine origin, rich in calcareous fossils, which date back to the Kimmeridgian period of the Upper Jurassic. These soils give the wines an elegant, subtle character, with great freshness and mineral flavor, which has now become a true trademark, recognized internationally of the precious terroir of Chablis. The grapes, after a soft pressing, are subjected to a very slow fermentation to extract all the perfumes and aromas. Bottling takes place after a very light filtration.
