Bocca di Lupo is the spark that ignited Tormaresca's winemaking dream. The desire to rediscover a noble varietal like Aglianico by offering a different but equally authentic interpretation has guided a project that has now lasted over fifteen years. HISTORICAL DATA: Tenuta Bocca di Lupo is located at an altitude of 250 meters above sea level in the heart of the wild Murgia barese, near Minervino Murge – Bari. The company's vineyards, totally organic, are located on calcareous and poor soils, excellent for obtaining quality red wines and excellent white wines. The main varieties grown are: Chardonnay, Fiano, Aglianico, Nero di Troia, Cabernet Sauvignon and Moscato di Trani. Bocca di Lupo is the spark that ignited Tormaresca's winemaking dream. THE VINTAGE:
The 2019 vintage was one of the coolest in recent years and one of the most generous in terms of rainfall. The winter was quite mild, with temperatures rarely falling below zero. The abundant rainfall in the first months of the year ensured a good vegetative restart, in line with the previous year. Spring was cool, with temperatures below the seasonal average, especially in May; these climatic conditions led to a phenological delay in the flowering phase of about two weeks compared to previous years. With the arrival of the warm season, in the first days of June, there was a sudden growth of the shoots that ensured a good leaf system for the plants. The measured rainfall in July, at the time of greatest water requirement for the vineyards, in conjunction with the growth of the grape, made it possible to obtain a precious water reserve essential for the optimal growth of the vine. The defoliation and bunch selection operations together with a favorable climatic course, characterized by good temperature variations between day and night, have guaranteed the achievement of the perfect state of ripeness of the grapes. The manual harvest of Aglianico for Bocca di Lupo began in the second week of October, confirming 2019 as the latest harvest in the history of the estate. Favoured by the climatic course, the grapes were able to ripen more slowly than average, giving very refined wines of great complexity.
VINIFICATION AND REFINING:
The harvest was carried out manually in crates and each bunch was subsequently selected on the sorting table. The alcoholic fermentation took place in stainless steel truncated cone-shaped vats at a controlled temperature of 28 °C. The maceration lasted for 15 days with punching down interspersed with délestage and brief pumping over in order to obtain a gradual and delicate extraction. During this phase it was decided to remove a good part of the grape seeds to avoid them bringing astringent sensations. Once the fermentation was completed, the wine was transferred to French oak barriques, where the malolactic fermentation and the necessary refinement took place. After bottling, Bocca di lupo rested at least one year in the bottle.
TASTING NOTES:
Bocca di Lupo has a lively and intense ruby red color. The nose expresses hints of red fruit such as morello cherry, currant and ripe pomegranate; the complex bouquet is completed by spicy hints of white pepper and licorice accompanied by balsamic notes of thyme and eucalyptus. On the palate it is graceful, with lively but silky tannins. The finish is long and persistent with pleasant sensations of freshness and complexity. A wine that reveals an excellent aging potential.
