The sensual and georgic Pinot Noir , from our vineyards seized by the woods, infuses into the glass notes of undergrowth such as currant and blueberry, as well as hints of rose. Of structure and balance woven into a persistent savory-acidic texture. Rosé is an “organic wine” , the result of the choice towards processing methods, in the countryside and in the cellar, aimed at ensuring the maximum representation of the territory. In the vineyard, only substances of natural origin are used. Furthermore, Biodiversity is encouraged to allow the balance between every form of life, both vegetal and animal. Each Edition is the result of a unique and unrepeatable vintage, an expression of the character and temperament of seasons that will never manifest themselves in the same way. |
THE WINE:
The sensual and georgic Pinot Noir, from our vineyards seized by the woods, infuses the glass with notes of undergrowth such as blackcurrant and cassis, as well as hints of black cherries. Of persistent harmony, punctuated by a dense plot woven in a good acidic vigor. Part of the Pinot Noir comes from the highest vineyard, Pian delle Viti, largely of marine origin, marginally lapped by the glacier.
VINIFICATION:
Soft pressing, cold maceration of whole grapes, fermentation in thermo-conditioned stainless steel vats.
REFINEMENT:
10 months in stainless steel tanks 50% barrique 50%
MINIMUM TIME IN BOTTLE:
30 – 40 months on the lees
