Spontaneous fermentation without added yeasts in concrete tanks for about 12 days, with temperatures starting from 22 C up to 29 C, with subsequent submerged cap maceration for at least 30 days at a temperature of 29 C. Consequently, after racking, malolactic fermentation is triggered, about 15 days with a constant temperature of 22 C. After which the wine goes into 4500 L Slavonian oak barrels to refine for 4 years, followed by a further 6 months of refinement in the bottle . Our Barolo is born from the union of our 5 cru vineyards in Barolo: Liste, Cannubi, Fossati, Cannubi San Lorenzo, San Pietro delle viole. For this reason it expresses together the elegance and power typical of the Barolo of Barolo and the true Barolo of the past.
