THE VINEYARD:
MONTELUPO
Montelupo hosts in the land of its vast slopes a large part of the CaViola vineyards: 11 hectares that rest on a soil rich in clayey, calcareous marl and sandstone at 400 meters above sea level that gives the wines great structure, complexity, and longevity. From the vineyards of Montelupo the following selections are obtained: Dolcetto d'Alba Barturot, Dolcetto d'Alba Vilot, Barbera d'Alba Bric du Luv, Barbera d'Alba Brichet and Langhe Nebbiolo
THE WINE:
The term “Caviòt” is the nickname (stranòm in Piedmontese) with which the inhabitants of Motelupo Albese affectionately addressed Clemente, father of Beppe Caviola. Barolo in its most classic meaning, where the blend of grapes from vineyards with different soils, exposures and altitudes, contributes to the varietal balance and the pleasantness of the drink. The 2013 vintage inaugurates the entry of an important piece in the company's product catalog, a Barolo that was able to show its best already at a young age. The color is ruby red with light garnet reflections that introduces an intense aroma of violet, rose and small red fruits, with a slightly balsamic finish. In the mouth the texture is dense and silky, the harmonious structure envelops the palate with soft and persuasive tannins, making the taste buds remember it for a long time.
Suggested serving temperature: 14-15° C.
VINIFICATION AND REFINING:
Fermentation 15 days in temperature-controlled tanks, 10-15 days of post-fermentation maceration with submerged cap. Aging 24 months in large barrels. Bottles per year
