Attems Pinot Grigio Ramato takes up the tradition of the Republic of Venice, because “ramato” was the word used to indicate Pinot Grigio.
CLIMATE TREND:
Winter 2024 was characterized by normal precipitation with temperatures not
particularly cold, which however gradually increased until the first
week of April, when the budding of the Pinot Grigio began. Compared to the
calendar of the territory we have managed to delay the opening of the buds by about 10 days thanks to late pruning; this is a technique that we have been using for years now.
Spring was characterized by mild temperatures and early rainfall
slightly above average then the good weather took over, thus ensuring
constant vegetation growth. The Pinot Grigio vineyards dedicated to Ramato reached the full flowering stage around May 30, significantly later than the previous year. June and July were two months where the hot summer was rehydrated by some beneficial rain that allowed the plants to face the month of August without excessive water imbalances. This year the Pinot Grigio had more sparse bunches. We split the harvest into as many days as possible, thus managing to maintain a good balance between sugar content and acidity in the musts that already from the first days of fermentation released excellent aromas.
VINIFICATION AND REFINING:
the skins and the must, after destemming and crushing, were left in contact for about 10 hours at 8°C. Subsequently, the rosé juice, obtained from the soft pressing, is left to decant for 24-48 hours. This is followed, on clear must, by alcoholic fermentation, conducted at low temperatures (15-17°C) for 15 days. The vinification is carried out in steel containers. After fermentation, the wine rests for 4 months on the noble lees which are constantly put into suspension.
THE WINE:
Attems Pinot Grigio Ramato takes up the tradition of the Republic of Venice, because “ramato” was the word used to indicate Pinot Grigio. It is born from a particular vinification: the must remains in contact with the skins for about 10 hours and enriches the wine with a beautiful pink hue. The bouquet is intense and complex, with clear hints of white peach, melon, followed by fruity notes of blackberry, black cherry and an intriguing finish of undergrowth flowers. On the palate it is enveloping, with a pleasant acidity and a long finish of red fruit and mineral sensations.
CULINARY PAIRING:
It pairs well with delicately flavored cured meats such as sweet raw ham. Perfect with pasta topped with vegetables or shellfish.
