THE CLIMATE:

The winter of 2022 was dry, with little rainfall and not particularly cold temperatures that gradually increased, causing the Chardonnay grapes to begin budding on the hills on April 11, while in the plains budding occurred 5 days later.
Compared to the average of the territory, we have managed to delay the opening of the buds by about 10 days thanks to late pruning; this is a technique that we have been using for years now.
Spring was characterized by mild temperatures and good weather and therefore by constant vegetation growth.
The fruit set of the Chardonnay grapes, which occurred immediately after flowering at the end of May, was perfect, thanks to the good weather and excellent ventilation.
June and July were two months where the hot summer was rehydrated by some beneficial rains that allowed the plants to face the month of August without significant water imbalances.
The Chardonnay grape harvest began in the hilly vineyards, 10 days earlier than in the plains. The first grapes are characterized by higher sugar concentrations and lower acidity, while in the last ones we detected a higher malic acidity.

REFINEMENT AND VINIFICATION:

The must obtained from the soft pressing of the grapes is left to decant for 24-48 hours. Alcoholic fermentation then begins on the clear must, conducted at low temperatures (15-17°C) for 15 days. The vinification is carried out in steel containers and second passage barriques (20%), at low temperatures, avoiding malolactic fermentation. The wine ages for 4 months on the noble lees which are regularly put into suspension.

THE WINE:

It has a beautiful deep straw yellow color. The aromas of Attems Chardonnay are a combination of fruity notes of white fig, quince and mandarin and spicy notes of vanilla and coffee beans. The wine is soft and enveloping, with a good structure. In the persistent finish, sensations of toasted bread and pine nuts arrive.
