THE WINE:
Dark garnet red, it stands out on the nose for its elegance and power in expressing hints of fruit and dried flowers embellished with a background of great spiciness, from which notes of anise emerge. In the mouth it is warm, full and vigorous, soft and round, with pronounced sensations of jam and raisins. It closes with a poignant finish for persistence, on the fruit. The grapes dried naturally in the fruit cellar until mid-January, undergo a concentration of sugars, aromas and flavors. Complete vinification with fermentation in wooden barrels, where maturation continues for 20 months and aging in the bottle for 10 months. limestone is a flaked granite rock with rare clay.
FOOD PAIRING:
Natural pairings for a great Sforzato della Valtellina are important dishes based on red meat or particularly tasty cheeses, such as Bitto. However, it is also an excellent meditation wine, to be sipped in small sips, at the end of a meal.
